Chai Spice and Pomegranate Poached Pear Salad
Serves 6 - Prep time 10 mins - Cook time 3 mins.
2 firm pears
350ml pomegranate juice
Butter lettuce leaves
120g soft blue cheese, roughly crumbled
100g Macadamia nuts, roughly chopped
Peel, core and segment each pear into 8th's
Add the pomegranate juice and Henry Langdon Chai Spice to a medium saucepan and bring to a gentle simmer, then add the segmented pears.
Simmer the pear segments for 3 minutes. The pears should still be firm.
Remove the pears and set aside to cool. Strain the spices from the juice, then return the saucepan with the juice to a low heat and simmer until reduced by 2/3. Set aside to cool. This becomes the dressing for the salad.
Wash and dry the lettuce and rocket then arrange on a serving platter.
Arrange the pear segments on top of the lettuce and rocket leaves, then sprinkle with the blue cheese and macadamias, then drizzle with the reduction of pomegranate juice.
Note: This salad works well with any salad leaves, but the combination of soft, sweet butter lettuce and the firm peppery rocket gives an extra level of flavour and textures.
