Nachos

Serves 4 - Prep time 5 mins - Cook time 7 mins

Ingredients.

200g plain corn chips

100g grated cheese ( try mixing tasty for flavour and mozzarella for texture)

1 tsp Henry Langdon Chilli Flakes (adjust the chilli to taste)

Toppings.

Sour Cream

Salsa

Guacamole

Method.

Pre heat the oven to 180c (170c fan forced)

Grate your selection of cheese and place into a large bowl, then add the Henry Langdon Chilli Flakes.  Toss to ensure even distribution of the chilli flakes.  Allow this to sit for a few minutes while you warm your corn chips.

Place the corn chips into a microwave/oven proof dish.  Try to stand the corn chips ups so that when you add the cheese, it melts through the corn chips and does not just sit on top.  

Microwave without the cheese for 45 seconds on high.  

Remove from the microwave and add half of the cheese.  Gently mix to get cheese through the chips then add remaining cheese.

Place the bowl into a pre heated oven for 5-7 minutes or until the cheese has melted. 

Remove from the oven and top with sour cream, guacamole and salsa.
