Chocolate Chai Biscotti

Makes approx 36 pieces - Prep time 25 mins - Cook time 35-40 mins

Ingredients. gourmet recipes

1/2 cup softened butter

2/3 cup sugar

1/4 cup Henry Langdon Cocoa with Chai

2 tsp baking powder

2 eggs

1 3/4 plain flour

30 g white chocolate, chopped

3/4 cup chocolate buttons

The aroma of the kitchen when these biscotti are cooking is divine; enough to put anyone in a festive mood! They are ideal for gifts or simply as a mouth pleaser when dipped in tea or hot chocolate.

Method:

Cream butter and sugar until pale and frothy, then gradually beat in the cocoa chai and baking powder. Beat for a further 2 minutes.

With mixer running, add eggs, one at a time, mixing well in between.

By hand, stir in the flour followed by the  white chocolate and the chocolate buttons.

Cover the bowl and chill for about 10 minutes

Pre heat the oven to 190c (180c fan forced).

Divide the dough into two and roll each into a 20cm long log.  Place logs onto a lined baking tray approx 10cm apart, then flatten them slightly.

Bake for 20-25 minutes.  They are ready when a skewer comes away clean.

Rest for 5 minutes, then move to a wire rack to cool for at least 1 hour.

Cut each log into slices 12cm thick, on the diagonal.  Place the slices onto a lined baking tray and bake at 165c for 8-9 minutes.  Turn the slices and bake for a further 7-9 minutes.  

Cool completely before placing in an airtight tin for storage.
