Henry Langdon Cracked Black Pepper Sea Salt Rub
1 pack puff pastry sheets, thawed
1 tbsp olive oil
1 large onion, finely chopped
2 large eggs, lightly beaten
200g ricotta cheese
55g grated mozzarella
55g grated cheddar
1 egg, lightly beaten for glaze
Pre heat the oven to 180c. Heat the olive oil in a medium frying pan. Saute the onions until soft and golden. Remove from the heat.
In a medium bowl, mix the eggs, cheeses and onion with Henry Langdon Cracked Black Pepper Sea Salt Rub to taste.
Place pasty sheets on a lightly floured surface and using a 13cm cutter, cut 8 circles. Lightly moisten the edges.
Spoon 2 tablespoons of filling onto the lower half of the circles then fold top half over, rolling the edges together to seal.
Glaze the tops with the lightly beaten egg then sprinkle lightly with Henry Langdon Cracked Black Pepper Sea Salt Rub, before cutting 2 small slits for vents. Place on a lined baking tray and bake in the centre of the oven for 25 minutes or until filling is hot and pastry is golden brown.
