Serves 6 - Prep time 20 mins - Cook time 45 mins.
6 chicken thigh fillets
15 cherry or mini roma tomatoes
2 green capsicum, deseeded and roughly chopped
1 red capsicum, de seeded and roughly chopped
1tbsp tarragon (fresh)
3 med onions, thickly sliced
4 cloves garlic, thinly sliced
1/2 cup water
1tbsp tomato paste
Pour a little olive oil into a pan and clarify the onions and garlic, then remove from the pan.
Add the chopped capsicum to the pan and cook for a few minutes then remove from the pan.
Add a little more oil to the pan and turn up to high.
Add the chicken pieces and move around until sealed and lightly browned all over.'
Add the vegetables, Henry Langdon Bouquet Garni, tarragon, tomato paste and water, then bring to simmer.
Lower the heat and leave to simmer for 40-45 minutes.
Serve with steamed rice or tagliatelle.
